The Rurban Fringe ‘Eat Local’ Challenge: Day 100

That’s a wrap, folks!  I’ve reached the end of the challenge … but not without a few struggles, highlights, and revelations along the way.  I’d like to take some time to reflect on what it meant for me, personally, to consciously think about the purchase and consumption of local food items over a period of time … and so I’ll be back with one final post on this experiment at a later date.

knifeforkBut to celebrate the official close of the challenge, I put together a 100-mile inspired meal including local herb-crusted pork loin, grilled new potatoes, dilled carrots, and fresh, green salad - it was fantastic - and even the smaller set at our home asked for seconds!  No mean feat, I can assure you.

Through this challenge, I’ve come to appreciate simplicity.  Economy.  Satisfaction.

And brought the sustainability debate to my kitchen table.
